Carol is a Holistic Nutrition Wellness Practitioner. She decided to study Holistic Nutrition as a result of her own battles with Systemic Lupus, Chronic Multiple Sclerosis, and Crohn's disease.
Carol was born with Lupus nearly 50 years ago when doctors did not diagnose that illness in infants or children. She spent her childhood being treated with prednisone for arthritis and skin rashes that specialists could not diagnose. At age 31, she was diagnosed with Multiple Sclerosis, then was told two years later, it was a rare form called Progressive Relapsing MS that will never go into remission and there are no treatments for it. Ten years later, she was diagnosed with Crohn's disease and the MS had taken away her ability to walk. For three and a half years she was bedridden as MS slowly took away what most people take for granted; the ability to swallow food, the ability to drink water, and the ability to thrive. In 2013, she was given two options; Hospice facility or Hospice at home. When she was told of those options, she prayed to God for wisdom. The next morning she woke up with an incredible urge to research nutrition, something she had not done before. She learned how to eat to overcome the debilitating symptoms of MS and Lupus. Six months after being told it's time for Hospice, she was walking with a cane and eating whole foods (May of 2014).
In May of 2016, Carol enrolled at The Southwest Institute of Healing Arts to study Holistic Nutrition. It was her intention to learn more about nutrition so she could further improve her health. By the third class, she realized that she could take this knowledge and help others. It became her passion.
On April 8, 2018, Carol graduated from the Southwest Institute of Healing Arts with a diploma as a Holistic Nutrition Wellness Practitioner. She did not want a certificate to be a nutrition coach, she wanted to be qualified to help others with more education. She is a member of The American Holistic Health Association and The International Association of Therapists. Carol also began to continue her education in September of 2018 in the field of complementary and alternative health.
